We are preparing to use Java for this purpose. There is a problem with Java right now in that version 1.0.2 isn't very compatible with version 1.1 (or 1.1.x), particularly in event handling. If you can wait I would wait for version 1.1.x to become available. Otherwise there are many succesfull applications written in 1.0.2 as well. You just have to expect some work on rewriting them for ver 1.1.x. You can of course start with Java version 1.1.x right now as well if you are prepared to develop with the raw JDK from Sun. That's available now. Java ver. 1.1.x is going to be a very powerfull development tool, especially when combined with RAD tools like Symantec Visual Cafe. Symantec is by the way also a strategic partner of Informix so it should work well with their engines. There are several other RAD tools for Java available or coming out soon, so you might want to check them out as well. I doubt there are many other tools that will be as usefull as Java when you want to run on both PCs and Macs, but they are out there.
