Server Studio - capture activity across all tables for a minute or two? Then report on it?

I have an application I'm trying to figure out what the results are at the database level when certain functions are executed. Is there a way, perhaps using Server Studio, that I could turn on a capture, execute the function, then turn the capture off, and see exactly what changed at the table level? If not Server Studio, any other ideas to arrive at the same solution?
