How to prohibit certain SQL operations ?

Are you sure? I'm afraid you are wrong.

I don't understand the reason you avoid using triggers. The other way
to prohibit some operations is using VIEW and privileges. You can issue
smth like
REVOKE UPDATE ON my_table_or_my_view FROM PUBLIC
