I've found the "update statisitics high/medium" very useful in improving performance. I wrote a small utility that searches the system catalogs and determines the leading index column names, then constructs the proper update statistics high statements. I then run another utility that determines the non-leading columns and updates the statisitics medium. Depending on the version of 7.x that you are using, detached indexes may be a problem. I detached the indexes and put them on separate drives from the data in an early version of 7, and the performance was awful, so I had to attach them to the tables (like in 5.x) and everything was fine again.
