Not as far as I know, but how about...
$ ln -s /dev/rdsk/informix_1 /dev/rdsk/informix_appname_1
...this would let you use the appname in all of your links and, while it
would leave some mess behind in the form of /dev/rdsk/informix_1, (which
I don't believe you'd be using in the new setup for anything) it does do
the job without requiring you to reinitialize. The server could keep the
link the old way until the next time you have a clean window to replace
it, but all other system functions could refer to it by its new name.
Just a thought... practicality depends on your reasons for wanting to
change the name (have you considered /dev/rdsk/informix/appname/number
if your reasons are purely cosmetic, btw?).
