I did this once, keeping the system online the 99% of the whole time (a manufacturing shop floor). I mirrored each of the new disks to the old disks, let Online image them and then once they were all ready, changed the symbolic links and brought them up as the primaries. Worked great and our total down time was under 5 minutes. The downside is that the devices I created on the new (larger) drives had to be the same size as the old ones - big deal, it're real easy to add that extra space back in as a separate chunk. cheers j.
