We have renamed the database to another name during maintenance windows to prevent access to it. You could also revoke connect privileges to that particular database. These are just a couple of quick solutions I can think of off the top of my head. I have a bunch of maintenance to do on one of the databases this weekend that will not affect the other database in any way.
