We have all but FoxPro from your list. If you have no time to test cut Visigenic and Intersolv from your list first. Their current normal drivers rely on I-Net from Informix. Not having to install that will relieve you from several problems. I have no experience with the Simba and Esker products. SQL Retriever should work ok, but OpenLink has much more functionallity, particularly on the security side, that you will probably want to utilise. The general idea is you want a server based ODBC driver both for performance, ease of installation and not the least functionallity. (Server based means that there is a component running on your database server that does the SQL translations and some other functions.)
