The output from EXPLAIN will output things which require a selection criteria: SELECT, UPDATE, and DELETE. (ie. things with a WHERE clause). Things such as INSERT, UPDATE STATISTICS, FETCH, etc. do not show. If you do not PREPARE your statements, they will show up in the explain file every time you execute them. If you PREPARE them, they show up the first time you execute them. Or, in the case of a DECLARE'd cursor, they show up when you OPEN that cursor.
