It will depend on whether the 8 point output is really a sensible default or not as to whether this is best handled via the printer's menu or not. An 8 point font is awfully small for general purpose output; 10-12 points is a better size. Most likely, you'd want to have the printer itself default to 10 points or so, and then have the special jobs which require the 8 point output put in an appropriate pre-amble.
