You can do it with schemas and views. Revoke whatever privileges you want on the logical schema, create views of the parts you want folk to see and grant appropriate privileges. I haven't tried this and there's a niggling doubt in my mind about the SYS tables still being visible. Anyone know more than I do (stupid question - course you do)? Before going to this bother, why do you need to hide it? If the users can't change the structure it won't do any harm for them to see it, will it? If you have individuals who see all information as theirs by right and waste time trying to discover it maybe you have a staff problem?
