Need to move data 7.10 -> 7.23 UC6

I require to move the databases [ 78 databases] with each databases having 220 Stored procedures [ Similar procedures]. What is the "smart way" to move the data over a week end with minimum downtime? TIA, Harinath Venkata [ New to DBA Activities]
