Are they running Red Hat or SuSE or a UNIX? They should check out postfix. It can take a total of five minutes to configure into a working mail server. Edit the main.cf and identify the server name, start/stop, you're on the air with a basic email server. If they are on a Linux there's an RPM for it or build it from source: http://www.postfix.org/ . It is easier to use than sendmail or <egad> qmail.
