the problem might be how space is allocated in your chunks. even
if you specify 124kb as your next extent size, if the engine can't find
124kb of contiguous space in the chunk, it will grab whatever it can. if
at the time it needs the extent, it can only find 64kb of contiguous space,
that is what it will use. note that it will do so without letting you know
this in any way, errors or logfile.
do an oncheck -pe and look at how your chunk is layed out, i.e. what
kind of free space you have in the chunk(s). also note that the values
that you are looking at in your query are in pages, and extent sizes are
given in k, which can be confusing at times.
your lack of downtime will be a problem, but a solution could be
something like adding a dbspace just for this table. create a dummy table
with the exact schema, and then copy the data to the new table from the old.
of course this means that you can't be modifying rows in any way, but the
old table would be available for reads. then drop the old table and rename
the new one.
