Start you data extract. Multiply the sum of the lengths of the columns (when displayed) by the number of rows then add the number of columns multiplied by the number of rows (for delimiters). This will be the maximum size. Then for each varchar, text, integer, decimal or money field work out an average display length and subtract the difference multiplied by the number of rows.
