You can use a trigger to insert a row in another table which is used just to track activity. This can be a "log" of activity against the table. You can carry a transaction date and time, user, function and see the result of the insert, update, or delete. It can be handy on an ongoing basis. Of course, you want to be sure to keep the "log" table from comsuming too much space. We have a handful of tables we track that way and have a periodic job that deletes rows oled than a specific interval (e.g. a month, three months, etc.). It can be very handy in pinpointing who did what, when.
