We have both Online Dynamic Server (7.20) and Online Workgroup Server (7.12) running on a couple of NT machines. Installation is just like any other NT installation. Yes, stuff did get written to the registery but that was automagic. As for modifying what was written to the registry, that's what SetNet32 is for.
