I don't believe there's one comprehensive place to get information
on all of the onstat -g options. If you call tech support, they can
help you identify any fields in question.
I think the reasoning for this is that onstat wasn't intended to be a
customer utility. Obviously, it's since become a necessary tool.
Someone was writing a book on all the options based on the
source code, but I haven't heard anything about it for a year or so
now.
I've seen documents that describe commonly used onstat -g
options, but I don't know offhand where they're located. Maybe on
the IIUG site.
You can probably ask about specifics here and I'm sure someone
can come up with the answers.

The official word that I got from Informix when I asked them for documentation
of these options for my Survival Guide was that they were afraid that if the
options were explained some of their competitors could reverse-engineer
IDS. I managed to document most of the options, but some are still mysteries.
Needless to say, I had a few choice editorial comments about this attitude
in the book.
