Unless you are on our system. My system is so busy, that the level 1's
don't finish. Even my level 0's have to run after hours (at night),
for them to finish within 24 hrs.

Yes you can do that. You can even do better than 3 hours downtime. If
you take
the level 1 live, without kicking the users, and restore it, then you
can kick
the users just long enough to apply the logical log file backups taken
after the
level 1 and put the users back on the new system. The logical log
restore of 3
hours' work should run well under an hour, especially if the logical
log copy
period is during a relatively low activity time!
