Yes you can do that. You can even do better than 3 hours downtime. If you take
the level 1 live, without kicking the users, and restore it, then you can kick
the users just long enough to apply the logical log file backups taken after the
level 1 and put the users back on the new system. The logical log restore of 3
hours' work should run well under an hour, especially if the logical log copy
period is during a relatively low activity time!
