I'm up for a challenge:
In your onconfig file, set:
MULTIPROCESSOR 1
NUMCPUVPS 2
SINGLE_CPU_VP 0
That should help.
As to the benefit of more CPUs -- yes, definitely

Hmm! Don't forget that
a) The application might be a single threaded server
b) You have to purchase the SCO MPS (Multiprocessor Extenstions)
and install/enable this as well.
