Just create a link (or symbolic link) for the missing chunk path to the path that you want it to really go to. You should be able to plan this before you start the restore. The Online Administrator's Guide recommends that instead of using the actual path, you use a link to it when you add/create a chunk so that you can change the location with a simple command.
