Can I store every sql stmt executed whe using dbaccess?

What I want to know is if there's a way to know each and every sql
statement that has been executed via dbaccess against a given database

No however, Jonathan Leffler's sqlcmd, a dbaccess replacement, can log a
history of all commands it processes (for interactive sessions logging is
the default and the -h option enables history logging for non-interactive
sessions). Sqlcmd is available from the IIUG Software Repository.

You could, by running 'SET EXPLAIN ON;' at the start of your dbaccess
session (you will get additional information as well, though).
If your question relates to sql of "any" dbaccess session, it may still
be possible...with some limitations.
