I'm not sure that that is what Jeff is after.
insert into table2 select * from table1 assumes that there is a table2 withthe same structure or compatible structure
to table1.
create table2 as select * from table1 seems to suggest that he wants to
create a second table with a structure based on the first. You can create a
temporary table in this way by:
select * from table1 into temp table2 but this will disappear when theprocess ends.
alternatively you can create a view by:
create view table2 as select * from table1 which I think is the closestyou'll get to the syntax Mako provided, however this is dynamic 'table'
whose contents will change as the contents of table1 change.

I may be wrong, and I've never tried this on Informix, but I think in Oracle
you can do the following:
create table2 as select * from table1
