Hmmm, if you're mirroring, you'll have to use one disk as primary and the other one as mirror. Essentially your usable bandwidth is equal to that of one disk, probably between 3 and 7 megabytes per second for serial reads. I wouldn't expect great throughput, you'll want to be working as much as possible in memory (I hope you have lots of that...). Serious I/O usually involves a gaggle of smaller disks, lots of SCSI/fiber channels and a logical volume manager, but that's a hefty server config.
